Chicken Parmigiana
Ingredients
Vegetables
- 1 diced onion
- 3 smashed garlic cloves
- 1 inch of Ginger
- 1 finely chopped red capsicum
- 1 finely chopped red chili
Spice Mix
- 1 tea Sweet Paprika
- 1 tea Mixed italian herbs
- 2 tins chopped tomatos (2x 410g tins)
- 1 tea chicken salt in ½ cup water
- 1 tea of Sugar
- Salt (seasoning to taste)
Chicken
- Two chicken breasts
- Sweet paprika
- Italian herbs
- Parmesan cheese
Procedure
- Combine the vegetables in a pan and cook for a few minutes
- When browned, add the Spice Mix and simmer / reduce down to remove some of the water in the mixture.
- Whilst this sauce is cooking, coat the chicken breasts in more sweet paprika and italian herbs, cook on the BBQ. Set aside
- Serve with chicken breast, sauce on top, and grated parmesan to taste.
