Fruit Cake

Ingredients

  • 1 ½ cup Mixed fruit
  • 1 cup Sugar
  • 1 cup Water
  • 125g Butter
  • 1 teas Mixed spice
  • ½ teas Salt
  • Lemon Peel
  • 2 cups SR Flour
  • 1 teas Baking Soda

Procedure

  • Place mixed fruit (well mashed), sugar, water, butter, mixed spice, salt and lemon peel in a saucepan and boil for 10 minutes.
  • Let cool then add flour and soda.
  • Bake in a moderate oven.
