Peanut Chicken


Peanut Sauce

  • ½ Cup Peanut butter (unsalted)
  • ¼ Cup Soy Sauce
  • 1 tab red curry paste
  • 4 cloves of garlic diced or crushed
  • 1 ½ inches of Ginger, diced
  • ¾ cup of Water

Other ingredients

  • 1 chicken breast, diced, or sliced
  • 1 large capsicum
  • 1x 410g can whole baby potatoes (or 3 diced, cooked potatoes)
  • 4 carrots diced or sliced thinly
  • Chili powder (to taste)
  • Oil


  1. Mix the peanut sauce ingredients together, blend if desired
  2. Cut the chicken, coat lightly with oil, add chili powder to chicken
  3. Cook chicken on BBQ or in fry pan until cooked, set aside
  4. Heat oil in pan, add carrots, cook lightly, add capsicum, cook lightly
  5. Add the peanut sauce
  6. Add the potato
  7. Add the chicken
  8. Cook gently until sauce is bubbling and ingredients have all heated well

Serve with nan-bread or rice
