Cooking Red Kidney Beans

Preparation of dried Red Kidney Beans for consumption.

Ingredients

Requires 12 hours (overnight)

  • 1 cup Red Kidney Beans
  • 3 cups water
  • Pinch salt

Procedure

  1. Sort and wash the beans
  2. Soak overnight in a bowl, cover the beans with several inches of water
  3. Next day, place beans in fresh water, in a saucepan and bring to boil
  4. Reduce the heat and allow to simmer
  5. Start checking for done-ness after about an hour. Keep an eye on the water level and stir occasionally to prevent the beans sticking to the bottom of the pan
  6. Add a little salt when the beans are slightly tender
  7. Stop cooking when desired firmness is reached
  8. When cooked, toss the water - do not reuse the water, or add the water to subsequent dishes

Serve

Use in dishes as necessary.

Comments

Red kidney beans must be properly cooked prior to use to remove toxins. If you buy canned beans they are already cooked, and no further preparation is necessary. If you are using dried beans, then you need to properly prepare them.
