Orange Cake

• 1 ½ cups SR flour
• 125g Butter
• ½ cup Milk
• Orange or lemon rind, grated
• 1 cup Sugar
• 2 Eggs
• Pinch Salt

• Place all ingredients in a large bowl. Beat on a medium speed for 5 minutes. Pour mixture into a ring or loaf tin. Bake in moderate oven. Ice with lemon icing.
• Lemon or orange essence work well.
