====== Ginger Sponge ====== ===== Ingredients ===== * 5 Eggs, separated * ¾ cup Castor sugar * 1 tab Golden Syrup * ⅓ cup Cornflour * 1 teas Ground cinnamon * ⅓ cup SR Flour * 3 teas Ground Ginger * 2 teas Cocoa * ¾ cup Thickened cream ===== Procedure ===== Beat egg whites in medium bowl with electric mixer until soft peaks form; gradually add sugar, beat until dissolved between additions. Beat in egg yolks and golden syrup. Triple sift dry ingredients, fold into mixture. Divide mixture evenly between prepared pans. Bake in a moderate oven about 18 minutes. Turn sponges immediately onto wire racks to cool. Beat cream until soft peaks form, join cakes with cream. Dust top with a little sifted icing sugar, if desired. {{tag>cakes_and_cheesecakes}}
